Egg beaters contain eggs which is a no no. I found an egg substitute at the health food store. No dairy, gluten, vegan, and is made from a potato starch.

I use it every week when I bake bread. I've modified the recipe in the book for Richard's banana bread. Sometimes I change the bananas to pure pumpkin or shreded zuchini .
